This Festive Cocktail – The Method

WThis is a simplified interpretation of a beverage found on the seasonal drinks list. Designed as a batch prepared mix which is loaded with tastes of a holiday season, which makes it excellent for a festive gathering. Save the extra citrus syrup you can use for brunch beverages, sweets, or to mix another batch of this cocktail.

The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

Making the Syrup: Place the listed ingredients inside a pan, heat until it reaches a light boil, mixing to dissolve. Then, turn off the burner allowing it to cool entirely. Decant into a clean bottle, seal and store in the fridge, it can be stored for up to four weeks.

Preparing the Batch Mix: Pour all the spirits and syrup into a sizeable container, allow it to infuse for one hour, then strain preferably using a fine cloth, so it's fully clarified.

When ready to serve: Pour 85ml of your cocktail base into a cocktail shaker containing ice, and stir carefully for about 60 seconds until cold. Pour to a frosted cocktail glass or equivalent, garnish with the cranberries and finish using a light spray of the essential oil above the glass.
